Ingredients
1 (20 oz) bag 15 bean mix (Hurst’s or similar)
1 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
2 carrots, chopped
2 celery stalks, chopped
8 cups water or low-sodium broth
1 (14.5 oz) can diced tomatoes
1 tsp paprika
½ tsp black pepper
Optional: 1 ham hock, diced smoked sausage, or cooked ham pieces
Salt to taste (added at the end)
Instructions
Rinse and sort the beans. Soak overnight or use the quick-soak method.
In a large pot, heat oil and sauté onion, garlic, carrots, and celery until softened.
Add soaked beans, broth or water, tomatoes, paprika, pepper, and optional meat.
Bring to a boil, then reduce heat and simmer uncovered for 1½ to 2 hours, or until beans are tender.
Stir occasionally and add water if needed.
Adjust seasoning with salt to taste.
Serve hot with cornbread or crusty bread.
Notes
Always add salt at the end to avoid tough beans.
Remove the ham hock before serving and shred meat if desired.
Soup thickens as it sits — add broth to reheat leftovers.
