Ingredients

  • 1 lb ground beef

  • 1 tbsp olive oil (if needed)

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 3 carrots, sliced

  • 2 celery stalks, chopped

  • 1 (14.5 oz) can diced tomatoes

  • 4 cups beef broth

  • 1 cup frozen corn

  • 1 cup green beans (fresh or frozen)

  • 2 medium potatoes, diced

  • 1 tsp Italian seasoning

  • Salt and pepper, to taste

  • Optional: 1 tbsp tomato paste for richer flavor


Instructions

  • In a large pot, brown ground beef over medium heat. Drain excess fat if necessary.

  • Add onion and garlic; sauté until fragrant.

  • Stir in carrots, celery, potatoes, and Italian seasoning. Cook for 2–3 minutes.

  • Add diced tomatoes, broth, and optional tomato paste. Bring to a boil.

  • Reduce heat and simmer for 20–25 minutes, until vegetables are tender.

  • Add corn and green beans; cook for another 5–10 minutes.

 

  • Season with salt and pepper. Serve hot with bread or crackers.

Notes

You can use ground turkey for a leaner version.

Add a pinch of red pepper flakes for a mild kick.
