Ingredients
1 lb ground beef
1 tbsp olive oil (if needed)
1 onion, chopped
2 cloves garlic, minced
3 carrots, sliced
2 celery stalks, chopped
1 (14.5 oz) can diced tomatoes
4 cups beef broth
1 cup frozen corn
1 cup green beans (fresh or frozen)
2 medium potatoes, diced
1 tsp Italian seasoning
Salt and pepper, to taste
Optional: 1 tbsp tomato paste for richer flavor
Instructions
In a large pot, brown ground beef over medium heat. Drain excess fat if necessary.
Add onion and garlic; sauté until fragrant.
Stir in carrots, celery, potatoes, and Italian seasoning. Cook for 2–3 minutes.
Add diced tomatoes, broth, and optional tomato paste. Bring to a boil.
Reduce heat and simmer for 20–25 minutes, until vegetables are tender.
Add corn and green beans; cook for another 5–10 minutes.
Season with salt and pepper. Serve hot with bread or crackers.
Notes
You can use ground turkey for a leaner version.
Add a pinch of red pepper flakes for a mild kick.
