This Best King Ranch Chicken Casserole is the ultimate Tex-Mex comfort food, packed with tender chicken, creamy sauce, and layers of tortillas, making it a perfect weeknight meal for the whole family.
Ingredients
2 cups cooked, shredded chicken
1 can cream of chicken soup
1 can cream of mushroom soup
1 can diced tomatoes with green chilies, drained
1 cup chicken broth
1 medium onion, diced
1 green bell pepper, chopped
1 tbsp olive oil
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp ground cumin
8 corn tortillas, torn into pieces
2 cups shredded cheddar cheese
Salt and pepper to taste
Instructions
Preheat oven to 350°F (175°C).
In a skillet over medium heat, add olive oil, onion, and bell pepper. Sauté until softened.
Add shredded chicken, cream of chicken soup, cream of mushroom soup, diced tomatoes with green chilies, chicken broth, chili powder, garlic powder, cumin, salt, and pepper. Stir to combine.
In a 9×13 inch baking dish, layer half of the tortilla pieces, half of the chicken mixture, and half of the cheese.
Repeat layers, ending with cheese.
Bake for 30-35 minutes or until bubbly and the cheese is melted and golden.
Let cool for 10 minutes before serving.
Notes
Use rotisserie chicken for a quicker prep time.
Add jalapeños for extra heat.
Serve with sour cream and salsa for added flavor.
